THE ORDER OF THE FIRE

1. Picaña first, fat side up over indirect heat. Score the fat cap and salt generously.
2. Salchicha coiled on the grate while the picaña cooks.
3. Entrañas last, very hot and fast. Sear the picaña to finish and let it rest 10 minutes.
