Frequently Asked Questions

ORDERING & DELIVERY

Where do you deliver?
Miami-Dade County only. We deliver with our own team and our own refrigerated transport — we do not ship by mail or courier. If your address is outside our area, the system will tell you at checkout, before you pay.

When do you deliver?
Tuesdays and Fridays. For Tuesday delivery, order by Monday at 1:00 PM. For Friday delivery, order by Thursday at 1:00 PM. Orders placed after the cutoff move to the next delivery day.

Can I choose my delivery time?
Yes. At checkout you select your delivery date and your preferred time window.

How much does delivery cost?
Free on orders of $150 or more. Orders under $150 carry a flat $10 delivery fee. There is no minimum order, and the fee always appears in your cart before you pay.

Do I need to be home?
Not necessarily. Leave delivery instructions at checkout and we will place your order in a safe, shaded spot. That said, everything arrives frozen and we recommend being available during your window — once delivered, product left outdoors is your responsibility.

WEIGHTS & PRICING

Why does each cut have sizes instead of one price?
Because meat is a natural product and no two pieces weigh the same. Rather than charge you an estimate and adjust later, we group pieces into weight ranges and give each range a closed price.

So the price I see is the price I pay?
Yes. Always. No post-delivery weight adjustments, no recalculated invoices, no surprises. If you order the 4.51–4.80 lb Vacío at $57, you pay $57.

What if my piece weighs less than the top of the range?
Every piece falls within the range shown. We hand-select and weigh each one before it leaves.

Can I order half a piece?
Not of a whole cut, but most of our cuts come in more than one size. Choose the smaller option if you are cooking for fewer people.

THE PRODUCT

Is the meat fresh or frozen?
Frozen and vacuum-sealed. Freezing at peak quality preserves texture and flavor better than days in a refrigerated display case, and it lets you cook on your schedule rather than ours.

How should I thaw it?
In the refrigerator, 24 hours ahead for steaks and up to 48 for large cuts. Never in hot water or the microwave — it ruins the texture. In a hurry, seal it and submerge in cold water, changing the water every 30 minutes.

How long does it keep?
Vacuum-sealed and frozen at 0°F, up to 12 months without quality loss. Once thawed, cook within 3 to 4 days and do not refreeze.

Where does your meat come from?
USDA Prime and Angus Choice from the United States, plus pasture-raised beef from Central America on selected cuts. We choose by origin for each cut rather than sourcing everything from one supplier. Origin is listed on every product page.

What does USDA Prime actually mean?
It is the top grade in the USDA system, awarded to roughly the top 12% of American beef, based on marbling and maturity. More marbling means more intramuscular fat, which renders during cooking and keeps the meat juicy.

I don't know these cuts. Where do I start?
Every product page includes the cut's alternate names, a tenderness and flavor profile, recommended cooking methods, and our own notes on how to cook and slice it. If you are new to Argentine cuts, start with the Picanha or the Vacío — both are hard to get wrong and both impress.

ORDERS & PAYMENT

What payment methods do you accept?
All major credit and debit cards, plus Shop Pay, Apple Pay and Google Pay.

Can I change or cancel my order?
Yes, up until the cutoff for your delivery day (1:00 PM the day before). After that your order is already being prepared. Write to info@asadocollective.com as soon as possible.

Something arrived wrong. What do I do?
Contact us the same day at info@asadocollective.com with your order number and a photo. Because we handle a perishable product, we need to hear from you right away to resolve it properly.

Do you sell to restaurants or for events?
Yes. We handle catering and wholesale accounts with their own pricing and delivery terms. Write to info@asadocollective.com and tell us what you need.

Products & Quality

We specialize in premium Black Angus beef, including USDA Prime and USDA Choice steaks, roasts, brisket, ribs, ground beef, and specialty cuts. We also offer all-beef franks, smoked prime rib, and curated variety boxes. All of our beef is sourced from cattle raised without added hormones or antibiotics.

All of our cattle are pasture-raised on open grass and then grain-finished to develop the rich marbling and flavor our beef is known for. This finishing process uses a carefully balanced diet with no animal byproducts, ensuring a consistently outstanding eating experience.

Marbling refers to the white flecks of intramuscular fat visible within the beef muscle. Greater marbling means higher quality — it makes beef more tender, juicy, and flavorful. USDA quality grades (Prime, Choice, Select) are determined largely by the amount of marbling present. We only carry Prime and Choice grades for the best possible eating experience.

USDA Prime is the highest quality grade, featuring abundant marbling. USDA Choice is the next tier, with a moderate amount of marbling and still an excellent eating experience. Both grades are significantly better than Select. We offer both so you can choose based on your preference and budget.

Yes. Our beef program follows NE3 (Never Ever 3) standards — no growth hormones, no antibiotics, and no animal byproducts are ever administered or fed. If an animal becomes ill, it is treated and removed from our program entirely.

All of our steaks are wet-aged for a minimum of 28 days. This aging process allows natural enzymes to break down muscle fibers, resulting in enhanced tenderness and flavor without any weight loss from dehydration.

Wet aging involves vacuum-sealing cuts and allowing enzymes to tenderize the meat during transit and storage. It's efficient, retains all the moisture, and is the method we use.

Dry aging hangs whole sides of beef in open air at controlled temperatures for several weeks. It concentrates flavor and changes texture but results in significant weight loss. Both methods produce excellent beef, but wet aging gives us consistent quality with less waste.

Yes. We are a fully USDA-certified program. Every stage — from sourcing and feeding to processing and packaging — is audited by a third-party inspector to ensure we meet the highest standards of safety and quality.

All of our cattle are harvested at a USDA-approved processing facility in Hereford, Texas. The carcass is broken down into primal and sub-primal cuts, then sent to a USDA-approved case-ready plant where each cut is individually portioned, vacuum-sealed, and labeled.

Black Angus cattle are renowned for their superior marbling, early maturity, high carcass yield, and adaptability to harsh weather. They're naturally calm and undemanding, which contributes to better meat quality. It's the breed best suited to deliver the premium eating experience we promise.

Absolutely. A 3-ounce serving of cooked beef provides 10 essential nutrients including protein (51% DV), B12 (41% DV), zinc (39% DV), selenium (38% DV), niacin (25% DV), and more — all for about 175 calories. Beef is one of the most nutrient-dense foods you can eat.

Some delivery dates require expedited (next-day) shipping to arrive on time. For example, a Tuesday delivery requires Monday overnight shipping. These services carry a higher carrier cost. To avoid this fee, we recommend ordering at least a week in advance.

Storage & Preparation

The safest method is to thaw beef in the refrigerator, where it stays at a safe temperature (40°F or below). Most steaks thaw in about 24 hours; larger items like brisket or prime rib may take 2–3 days. You can also thaw under cold running water in a sealed bag. Never use warm or hot water.

After thawing, beef can safely remain in the refrigerator for 3 to 5 days before cooking. If you decide not to cook it within that window, you can safely refreeze it without cooking — just be aware that some moisture loss may occur.

For best quality, cook frozen beef within 4 to 12 months. Beef remains safe indefinitely when stored at 0°F or below, but prolonged freezing can degrade flavor and texture. Keep your freezer at 0°F and ensure the packaging is tightly sealed to prevent freezer burn.

Yes. If the beef is still raw and was thawed in the refrigerator, you can safely refreeze it without cooking. However, some moisture and texture quality may be lost. If the beef was thawed using another method or has been cooked, it can also be refrozen.

Freezer burn appears as dry, discolored patches on the surface of frozen meat caused by air exposure. It is completely safe to eat, but the affected areas may have a dry, tasteless quality. Simply trim away freezer-burned portions before or after cooking.

For the best results: (1) Thaw steaks in the refrigerator overnight. (2) Bring to room temperature 30–45 minutes before cooking. (3) Pat dry and season generously with salt and pepper. (4) Use a hot cast iron skillet or grill for a proper sear. (5) Cook to your preferred doneness — we recommend medium-rare (130–135°F internal) for optimal tenderness and flavor. (6) Rest for 5 minutes before slicing. Visit our recipes page for detailed guides on every cut.

Ribeye & NY Strip: Best grilled or pan-seared at high heat.
Filet Mignon: Ideal for pan-searing with butter basting.
Brisket: Low and slow — smoke or braise for 8–12 hours.
Short Ribs: Braise or smoke until fork-tender.
Tomahawk: Sear on high heat, then finish in the oven.
Ground Beef: Versatile — burgers, tacos, meatballs, or bolognese.

Detailed nutritional information is available on each product page. If you need additional information about specific ingredients or allergens, please contact us and we'll be happy to provide it.
